Cooking + Current Reads: Meal Prep Freezer Burritos and Five Star Reads

Does anyone else feel like the month of March has been jam packed with New Releases (and amazing ones at that!)  I feel like it has been non stop with great book after great book.  It seems like every book I picked up this month I truly enjoyed.  I didn’t have a lot of ARCs to read as it’s a busier time of the year for work for me, so I did get to actually handpick some reads that I had been wanting to read for awhile.

I love to meal plan and I love to cook/eat Mexican food so of course my meal plan for this week consists of burritos.  I make everything on Sunday, freeze them and then me and my husband have lunch for the week.  We don’t have to spend any extra money on food for lunch (those $5-8 adds up quick!) and they are pretty cheap to make!  One of my favorite recipes actually doesn’t come from anywhere- it’s one that I have always just made and we love it!  If you wanted some other options, I did start out making ones similar to The Pioneer Woman’s recipe, but I have left out and switched up some of the ingredients to make it my own.


  • 1 Tsp Olive Oil
  • Onion- I use about 1/4 of one
  • Garlic- about 2-4 cloves
  • Ground meat- we have used turkey, beef, and deer.  I have also used chicken too.
  • Taco seasoning
  • 1 cup of water
  • One can of corn, drained
  • One can of Rotel
  • One can of black beans, drained
  • 10 inch tortillas
  • Cheese- Mexican or cheddar


  1. Saute onion and garlic in olive oil until clear and aroma smells great
  2. Add the (ground) meat and cook until no longer pink (about 8-10 min)
  3. Add the taco seasoning and water
  4. Add drained corn, black beans and rotel- stir CAREFULLY! Pot will be full!

5. Let it heat up for a little while then remove from heat

6. Microwave the tortillas for about 20 second

7. Get foil and cut out 10 pieces

8. Spoon two scoops of meat mixture on the far left side of the tortilla

9. Add a line of cheese to the tortilla

10. Roll up, date, and freeze!

Since I have gotten a lot of reading done this month, I thought I would link up some of my five star reads that I am still thinking about.  If you have been living under a rock and haven’t seen these, then do yourself a favor and check them out.  One set is a duet series that is totally binge worthy and is free on Kindle Unlimited.  The other might seem a little bit taboo, but only because it is a triangle.  This book does contain cheating, but I hope that you give it a chance.  I am not one to typically read something like this and I do not condone it at all, but I took the leap of faith and I am glad I did!  Please trust me and give it a shot- you won’t be disappointed.

Tessa and Rowan’s story held me captive until I finished both books in record time. I was so interested to see how this went down. One of my favorite sub genres in Romance books is friends to lovers and especially young love. There is just something different and special about it. Their story was no different in that department, but it was different in so many other good ways!

Tessa is back in town to settle some family things and runs into her old best friend Rowan (whom she secretly loved fiercely even at the ripe old age of 16). She tries her hardest to stay away but ultimately they both realize and already know that they can’t. It seems like it would be a simple story, but it’s not- it’s one filled with so much angst, heartache, slow burn, and some out of this world chemistry!

This is the first book that I read by Claire Contreras and it definitely won’t be my last (hello book #2!) I thought the story had the right amount of romance, angst, and parts that warmed your heart. Tessa is a powerhouse of a woman, and I truly enjoyed reading about her going after what she wants in life. I gave this book 5 stars because I really did enjoy every piece of it. I cannot wait for Book #2 so be sure to look for my review there!

My Way Back to You (Second Chance Duet, #2)My Way Back to You by Claire Contreras

The series is concluded with this book and I am left with the biggest smile on my face! It was an amazing finish for this second chance romance and I cannot say enough good things about it.

The second book takes place after some time has passed, and things have changed. Mainly Tessa’s life, but we also got to see how Rowan had finally wised up and was making smart decisions. While it did seem a little far fetched and how quickly everything went down, I don’t think I could have taken any more heartache in trying to figure out what was going to happen! I don’t want to give too much away if you haven’t read it, but just know that you are in for a very big surprise in Book 2 and you will hopefully finish the book with a smile on your face just as I did.

I thought Claire did a grab job wrapping up all of the loose ends, you could feel the grown-upness in the characters and the story itself. It was still filled with angst and I had no idea which way it was going to go, but I was so happy that everything worked out like I wanted it to. I gave this book 5 stars as well because it was the perfect ending. It was a great read and left me fully satisfied. If you haven’t had a chance to check out this series, I highly recommend you going out and getting the books today!

I am not really that into love triangles, but this was a love triangle done right. And if were to ever recommend one to someone else, this would be at the top of my list- every. single. time.

I wasn’t really sure how to feel after reading this book- I just know I absolutely loved it. Charlie, Cameron and Reese have completely consumed my thoughts, and when I thought I had it figured out and was going to be happy with how the story was going to end, I found myself wishing for a different ending and completely breathless. It was heartbreaking, it was gut wrenching, and it was so emotional- so, so, so emotional. I loved how the book didn’t focus on the past or what happened then, it was more about life- something we all can relate to- and how people as adults handle the situation that they are faced with. It is a real, raw, and honest portrayal of life and how sometimes things just happen. I have never felt so torn and conflicted while reading, and then to be left with such a cliffhanger is almost devastating, but I know that Kandi will wrap everything up in Book 2.

This is not your typical triangle- don’t be scared of it, don’t avoid it, and don’t not read it just because it has a triangle in it. I absolutely loved it and even tried to explain it to my husband while we were in the car -which all totally went over his head, but that’s OK! Go out and get this book and make sure you make time in your schedule to read it. You will not be disappointed!

I gave this book 5 stars because it was so much more than I was ever expecting. It was beautifully written, it got my attention and held it, and it was one of those books that just stick with you. I am on pins and needles waiting for Book 2 to be released!

Review: Twisted Threads by Kaylin McFarren

I didn’t realize when I started to read this book that it was a part of a series, so now I wish I would have read all of them. It can definitely be read as a standalone though, and I would highly encourage you to pick it up.

Twisted Threads was so well written, structured and developed. It definitely made me use my brain to keep up with everything and try to solve the puzzle, so if you are looking for a “lose yourself” sort of book this is not for you! It is suspensful from the get go, and sucks you in so that you have to finish it and know the whole story.
This is the story of Akira Sota and how she is a total bad ass! Even the first few chapters showed just how much of a bad ass she is and it just got more fast paced from there. I loved the setting of the story, I loved all of the characters, and I loved how it had every single type of thing I could want in a book. It had the romance (although at times I was a little confused by the side conversations and realized some things might have been explained in previous books but it definitely made me want to go back from the very beginning and them all), it has mystery an intrigue, and a murder!

In order to rid herself of the life that she knows – a geisha- she must complete one last task and that is to find out who killed her masters sister.  In order to do that, she must go on a cruise (how fun!) and meet with the people who have been identified as the murderer’s.  It is when she becomes close – well too close if you want to keep it real- to the couples nephew Devon that she might not accomplish what she has been tasked with.  But could it lead to other things?  You will have to red to find out!

I give this book 4 stars because while it can be read as a standalone, it might have been all the better if I had started from the beginning. I enjoyed the book and would definitely recommend you picking up a copy and meeting everyone!

This book was so much fun!! I loved the story of Nora and Asher!
This story takes place in a prep school located overseas (to me) in Britain. Ever since Nora’s mom has fallen in love with her Prince Charming, they have all been whisked away to a new land and new life.
When she firsts walks into the hallway of her new school, she had no idea what to expect and she certainly didn’t expect to meet a guy that would make her feel the way she does upon just meeting. However, Nora has no clue just what Asher’s true intentions are, but when his master plan is revealed, she won’t be the only one with a broken heart.
I love reading into a little glimpse of a lifestyle I know nothing about- a lifestyle of jet-setting, club hoping and staying out all hours of the day (sex, love and rock and roll at 18..YIKES!). While it seems so interesting, it also seems exhausting. And to have someone to share that with would be fun and exciting too. I also loved how at times innocent the characters seemed, and at other times, I completely forgot I was reading about high school people.
I would give this book a 4 star rating because it was a fun light read and I enjoyed the writing. I enjoyed the dual points of view (as always) and I loved how far away the book took me from my real life. I thought it ended rather short and quickly and I was surprised at how it wrapped up, but it was a story that kept me interested and engaged. I can’t wait to see what else I can read from Carrie Aarons!

Scoring Mr. Romeo is a single mom story that was very enjoyable to read.

I will admit I am a complete sucker for single mom/dad stories so when I saw the blurb, I was super interested in it. I am glad that it did not disappoint.

Luca and Sabrina both have their own lives, and neither of them are looking for love. When Luca runs into Sabrina and her son on two separate occasions, it seems like it is just meant to be. Even though Luca wasn’t looking for love, he knows a good thing when he sees it, and goes after what he wants. But being a single mom, Sabrina isn’t necessarily ready to let her guard down and let a man into both of her lives. Can they find a way to make it work? Or will they both realize that they have separate lives, and the two of them shouldn’t be mingled together?

First off, any man that steps up and takes care of his own, or not his own children has major props in my eyes. I think there is nothing sexier than a man being a role model to a child. It gets me every time. So to read about how much Luca enjoyed being around Sabrina’s son was SO enjoyable to read. More men should be like Luca. Sabrina does go a little haywire in my opinion, but I have always been open to love- but I have also never had to deal with being a single parent, so i can’t really pass judgement on her decision.

I am giving this book 4 stars because it was a fast and enjoyable read. It wasn’t a book that was going to change my life, but it also had points that I could respect and see both sides of their stories. The story line was interesting and I read it in one day. Again, if you are looking for something fun and a single parent story- I would definitely recommend this! It was definitely heartwarming and kept me interested the whole time.
